How are you? I am so glad you’re here with me today. I hope you have your cup of coffee or tea ready as we dive into our countdown to fall..it’s just 9 days away! Can you tell I am excited? It might be all the lingering warm and humid weather but I am jumping out of my skin, ready for ALL the Autumnal ambiance to catch up. El Nino has been really messing with the routine around here! Although, David has been really enjoying the incredible surf conditions we’ve been blessed with here on the coast…so I guess that’s one benefit of our unusual summer weather.

This week has been a slower one for me; Ellie had an accident while chasing the water hose monster and so we’ve been very closely monitoring her and keeping her activities VERY limited. That meant it was a week without our morning ( or evening ) walks, and absolutely no playing, jumping, wrestling or stairs. Let me tell you, keeping a frenchie from doing what she wants can be quite the challenge. But I am happy to say she did her best to comply with my “demands” and she is doing MUCH better. This coming week we will be back to our regular programming and I am glad for it because I MISS my nature walks and sunrises.

With the extra time I had skipping our walks, I was able to get a little creative in the kitchen to work on a coffee syrup recipe. It has ALL the fall flavors married together and let me tell you, this might be my new favorite: Apple Spice Syrup. Bestie, this has given my daydreams that the weather may turn cooler at any moment a whole new level of delusional and I don’t even care. One sip and I think you’ll agree. Think of smelling Grandma’s famous apple pie baking in the oven, wafting through the whole house and then pouring that straight into your freshly brewed coffee…divine!

APPLE SPICE SYRUP

INGREDIENTS

  • 1 cup brown sugar

  • 1 cup water

  • 1 apple diced small

  • ½ tsp apple pie spices ( if you don’t have it premixed, combine these in a ratio that please you cinnamon, clove, ginger, all spice, nutmeg )

  • pinch of salt

  • 1 tbsp vanilla ( always measure with your heart )

INSTRUCTIONS

  1. Start by dicing your apple; you could even use a box grater to make the apple pieces smaller thus extracting more juice and flavor. I like to dice them because then after straining I can use the apple over oatmeal, yogurt or even ice cream!

  2. Add your sugar, water, apples, spices and pinch of salt to a small pot. Turn heat to medium and allow mixture to come to a medium simmer, making sure to stir ingredients together.

  3. Let mixture simmer for a minimum of 10 mintues. The longer it simmers, the more apple flavor you will harness. After your mixture has simmered to your hearts content, pull off of the heat and add your vanilla extract while you allow things to cool down.

  4. After the syrup has cooled slightly you will being straining the apples out, making sure to press the apples against the strainer to get all the syrupy goodness out. This is a good time to throw your apples into a small container to save for later use. Make sure to label and date them!

  5. When your syrup has cooled completely put into your storage container of choice, make sure to label and date before storing in your fridge. This should keep about 2 weeks, although I doubt it will last long…

  6. Enjoy your syrup in your morning coffee, tea or anything else you can think of! Please let me know how creative you get!
